Bliss Balls






                                In spite of my love of wickedly decadent, sugary treats I have, of late, been trying to bake a little healthier. Enter, Bliss Balls. These little power packs are such guilt-free treats and I can see they are going to be making a regular appearance in my kitchen. Refined sugar free, low carb, high protein, high fibre. Yip, they tick lots of boxes AND they taste great!!! There are tonnes of variations and I'm looking forward to experimenting so watch this space!

 COCONUT APRICOT BLISS BALLS

1 Cup Dried Apricots
1/4 Cup Dates
1/4 Cup Ground Almonds
1/2 Cup Honey
1 Cup Dessicated Coconut


Place all ingredients into Food Processor and whizz until the mixture comes together-this takes about 3 or 4 minutes. The mixture should be nice and soft with no big chunks. Roll into balls and roll in coconut if you wish!

A Little Taste Of Spring




                   Well, I think Spring might not be so far away!!! I could not be more excited about this. You see, Winter and I, we're just not really friends. So to celebrate I made this  Citrusy, Apricoty Fudge slice. Super easy and super yum.


 Citrus and Apricot Slice

 1 packet plain(ish) biscuits (I used Fruit Digestives)
 3/4 tin Sweetened Condensed Milk
 75 grms Butter
 1 tspn Vanilla Essence
 3/4 cup Dessicated or Shredded Coconut
 3/4 cup Dried Apricots, chopped
 1/4 cup Raisins or Sultanas

 Melt butter, condensed milk and vanilla together in a small pot microwave proof jug. Process biscuits in a Food Processor to fine or chunky crumbs (Depending how you like it!). Place in a large bowl and mix in Apricots, Sultanas and Coconut. Stir in Condensed Milk mixture. Press into a lined slice tin. Refrigerate until cool. When cool, ice with a simple Lemony icing made with a little butter, icing sugar and lemon juice.
 Now that's what I call easy!
